The months of November and December are all about holiday entertaining. For the next several weeks, we will post some of our favorite recipes and share others’ festive ideas, all of which will suit this cheerful season—and your discerning appetite—perfectly.
Gorgonzola-topped Fresh Fig Verrine with Balsamic Reduction
8 verrine glasses & demitasse spoons
6-8 figs (sweet variety)
8 oz. cream cheese, softened
4 oz. creamy gorgonzola
1-2 T rich, darky sherry or Calvados (optional)
1 C balsamic vinegar
3 T honey
1.) Cut figs in half and scoop flesh into small glasses, filling each two-thirds to the top.
2.) Combine cream cheese and gorgonzola in a medium-sized bowl. Add sherry or Calvados to taste and mix until a spreadable consistency.
3.) In a small saucepan, bring vinegar and honey to a boil over medium-high heat. Reduce heat and simmer for approximately 20 minutes or until mixture becomes syrupy. Let cool to room temperature.
4.) Pipe or spoon cheese mixture onto figs and decorate with a dollop on top. Drizzle balsamic reduction over each verrine.
