Finally! The warm summer weather is kicking in and all those heat seekers out there are looking for something to cool themselves off. There’s always the taste of fresh Oregon berries, cold Tillamook ice cream, or a cold ice tea to cool you down, but why not try something different and more refreshing?
We love the classic and delicious taste of grapefruit mint sorbet. Not only is it ice cold, but it’s refreshing with delicious citrus flavor of grapefruit and cool mint that we all love. So sit on your back deck or porch, put your feet up, and indulge in this summer delight!
Grapefruit Mint Sorbet
3 C water
1 C grapefruit juice
1 1/2 C. sugar
1 T grapefruit zest
1 T mint leaves, minced
3 T citrus liqueur
1. Bring the water, juice, and sugar to a boil, stirring occasionally, until sugar is dissolved.
2. Remove from heat and add zest, mint, and liqueur. Cover and set aside to cool. Process mixture in ice cream machine, then transfer to a container with a tight lid. Freeze for 1 hour.
3. Serve in a small dish with a sprig of mint.
