For the wild side-> Strawberry Salsa
1 pint strawberries, hulled and chopped thin
4 roma tomatoes, seeded and chopped
1 jalapeño pepper, seeded and minced
2 cloves garlic minced
1 lime, juiced
1 T. olive oil
In a medium bowl, combine ingredients. Cover and refrigerate for at least 2 hours before serving.
For the smooth taste-> Strawberry Coconut Orange Smoothie
3 C. strawberries, hulled
1/2 C. coconut milk
1 orange, peeled
1 C. ice cubes
Place the ingredients in a blender and blend until smooth.
For the dessert indulger-> Classic Strawberry Shortcake
8 scones or Upper Crust Bakery biscuits
1 quart strawberries, hulled and sliced into quarters
1 pint whipping cream
brown sugar (optional)
1. Slice biscuits or scones in half, crosswise. Prepare whipping cream.
2. Place bottom of biscuit or scone on a plate or in a dessert bowl and spoon approximately 1/2 C. of strawberries on top. Cover with biscuit or scone top.
3. Add a dollop of whip cream on top. Add a few berries. Sprinkle with a teaspoon of brown sugar and serve immediately.
