Discovered in Ecuador in the early 1800s, it dominated the fine chocolate couverture market before the cacao trees were destroyed by diseases nearly 100 years ago. Recently, pods of white and purple cacoa beans were discovered in the mountains of Peru, and it was confirmed that they were of Pure Nacional variety (previously thought indigenous to only Ecuador—and extinct). 15 tons of it are in slabs.
