Eat your vegetables. And most importantly, remember to drink your chocolate. We ran across this recipe for European-style drinking chocolate in one of our past Indulge issues, and thought we should post it for our readers,mainly because it’s purely heaven. It can be served unadorned or can be topped with a dash of slightly whipped cream or a grating of dark chocolate.
European-Style Drinking Chocolate
1 C whole milk
1/2 C heavy (whipping) cream
8 oz. premium dark chocolate, finely chopped
1/2 t. cornstarch
1-2 t. water
1 t. pure vanilla extract
1) In a small saucepan over medium-low heat, heat the milk and cream until small bubbles form around the edges of the pan. Remove from the heat and stir in the chocolate until completely smooth.
2) In a small bowl, dissolve the cornstarch in the water, then add to the chocolate mixture and stir until completely smooth and thick. Add the vanilla and stir until completely smooth.
3) Let the hot chocolate rest for 10 minutes, uncovered, to develop its flavor and texture. Then briefly reheat over medium-low heat, stirring constantly. Serve in warm cups.
